Raspberry Peach Oatmeal

I’m sorry for the lack of posts, the past couple of days have been crazy to say the least! On Monday my internet was as slow as snails, and I couldn’t even log onto my email, and last night was at the Hatch Awards that I attended with the work crew. Tonight I’m headed to dinner in Cambridge with some fellow Boston food bloggers! I’m really excited, it should be a lot of fun.

I’ll leave you with this recipe for Raspberry Peach Oatmeal for now (I promise some ACTUAL cooking and no more oatmeal this weekend! ha)

Ingredients/Recipe:

  • 1/2 cup oats
  • 1/2 cup skim milk
  • 1/2 cup water
  • 1/2 tsp of vanilla
  • 1/2 tbsp flax
  • 1 tbsp raspberry preserves
  • 1/2 peach
  • 1/4 cup raspberries
  • 1 tbsp almonds
  • Drizzle of honey

  1. On the stovetop, bring the milk and water to a boil.
  2. Add the oats and flax, and simmer over medium heat for 3 – 5 minutes until most of the liquid is absorbed.
  3. Stir in the vanilla and raspberry preserves.
  4. Cut up the peach into bite-sized pieces, and top the oatmeal with the peach and raspberries.
  5. Sprinkle on the almonds and finish with a drizzle of honey.

I woke up early and made a quick batch of maple pumpkin oats for the fam to fuel us up for the Memory Walk:

I didn’t have all of my oatmeal ingredients with me, but made use of the pumpkin butter that I grabbed at TJ’s yesterday. It was a smorgasboard of:

  • 2 1/2 cups of water
  • 2 cups of oats
  • 1 tbsp of pumpkin butter
  • 2 tsp of pumpkin pie spice
  • 3 tbsp of raisins
  • top with walnuts
  • drizzle with maple syrup

They were pretty good and definitely hit the spot, but I’ll have a better recipe for you once I’m back in my little kitchen with access to all the goods ;-)
